Quinoa is a seed not a grain, it has a low glycemic index, is high in protein -contains all the essential amino acids-, rich in fiber and minerals, contains omega 3 and 6 fatty acids, is a good source of vitamin B2, folic acid and vitamin E, and is also rich in polyphenols, phytosterols and flavonoids.  The happy union of the just stone-ground organic whole quinoa and the fresh fruity extra virgin olive oil makes this a very special loaf of exquisite flavor and very soft crumb.
