My name is Hector, I have been making this bread for more than 18 years, first as an assistant baker, later as the lead baker and now at my own bakery: The New Leaf Bakery. 
 
Very vivid in my memory are those early days of baking, in the small space on the South A street in Santa Rosa, starting at 4:00 AM when it was pitch-dark outside, and the bright lights were illuminating our worktables. Our hands were submerging in the warm combination of the just stone-ground flour and water that we would mix with resolution.  After a while, the air would be carrying the earthy fragrance of the fermenting dough and we would tend to the burning almond firewood in the brick oven.  It was magic.
 
Today, I’m very happy to be able to offer you the best quality of Gluten Free bread that will make an important contribution to your health and well-being.  Our bread is available online at thenewleafbakery.com At several stores in the North and the  Bay Bay area, please look for our logo and name " The New Leaf Bakery." We are making two types of Gluten Free bread; one is based in a combination of Quinoa and Millet and the other is pure Quinoa.  In both cases we follow the traditional ancient method of stone grinding the Quinoa and Millet at the bakery just before making the dough, followed by a slow natural fermentation or authentic sourdough.
 
The health benefits of both Quinoa and Millet are well known.  Quinoa is a seed not a grain. It has a low glycemic index, is high in protein and contains all the essential amino acids. It is rich in fiber and minerals, contains omega 3 and 6 fatty acids, is a good source of vitamin B2, folic acid and vitamin E, and is also rich in polyphenols, phytosterols and flavonoids.  Millet is a grain but is not inflammatory as most grains are; it is rich in magnesium and potassium and high in fiber.  But the best thing about Millet is that it can work wonders for your gut; your gut microbes love its fiber, so it is a great pro-biotic.
